How to measure Honey - moisten the measuring cup with oil or melted butter. This makes it slide right out with out any scrapping. If the recipe calls for oil, measure the oil first, and then the honey.

Low Fat Chocolate Muffins

Makes 18 muffins

Blend pitted prunes with a little boiling water (about 3 Tbsp) to the consistency of baby food. Make 1 cup of this paste.

1 cup Prune Paste
1 tsp Baking Soda
1 cup Boiling Water
1 cup Honey Bunny™
2 Eggs
1 tsp Vanilla
1 cups Flour
4 Tbsp Cocoa Powder

Sprinkle baking soda on pureed prunes. Pour boiling water over them. Add Honey Bunny™ and mix. Next mix in eggs and vanilla. Add Flour and cocoa and mix until well blended. Pour into muffins cups and bake for 25 minutes at 325°F.
